30 Veggie Taco Recipes to Make Your Day Happier

Whether you’re a vegetarian or just want to eat more produce, tacos are an excellent delivery mechanism for veggies (and fruit).
And if you don’t like to cook, you’re in luck! These recipes are easy (they’re more assembling and heating than “recipes”) and come together quickly when you’re hungry.
An important note about tortillas: corn are technically the healthiest, but I’ll be honest – I hate corn tortillas. I much prefer flour ones. And fortunately I found some options that are high fiber and still taste great (plus they’re small, meaning your tacos are more filling and less tortilla. I’m very particular about the filling/tortilla distribution ratio).
So here are 30 recipes for veggie tacos, grouped into traditional, creative, and groundbreakingly unique. And look how easily you can knock off both Meatless Monday and Taco Tuesday…
Let’s start with 10 traditional veggie tacos.
1. Spicy Cauliflower Tacos
Ingredients: Cauliflower florets, taco seasoning, olive oil, lime juice, cilantro, avocado, and salsa.
Instructions: Toss cauliflower with taco seasoning and olive oil. Roast until tender. Assemble tacos with roasted cauliflower, avocado slices, salsa, and a sprinkle of cilantro. Serve with lime wedges.
2. Black Bean and Sweet Potato Tacos
Ingredients: Sweet potatoes, black beans, cumin, chili powder, garlic powder, tomatoes, red onion, and cilantro.
Instructions: Roast sweet potatoes with spices until tender. Mash black beans with spices. Assemble tacos with mashed beans, roasted sweet potatoes, diced tomatoes, red onion, and cilantro.
3. Grilled Zucchini Tacos
Ingredients: Zucchini, bell peppers, red onion, olive oil, taco seasoning, lime juice, feta cheese, and fresh cilantro.
Instructions: Grill zucchini, bell peppers, and red onion with taco seasoning until charred. Assemble tacos with grilled veggies, crumbled feta cheese, lime juice, and cilantro.
4. Avocado and Chickpea Tacos
Ingredients: Chickpeas, avocado, cherry tomatoes, red cabbage, lime juice, cumin, paprika, and sour cream.
Instructions: Mash chickpeas with avocado, lime juice, cumin, and paprika. Assemble tacos with mashed chickpea-avocado mixture, sliced cherry tomatoes, red cabbage, and a dollop of sour cream.
5. Mushroom and Spinach Tacos
Ingredients: Mushrooms, spinach, garlic, olive oil, cumin, chili flakes, diced avocado, salsa verde, and queso fresco.
Instructions: Sauté mushrooms and spinach with garlic, cumin, and chili flakes until cooked. Assemble tacos with sautéed mushrooms and spinach, diced avocado, salsa verde, and crumbled queso fresco.
6. Tempeh Tacos
Ingredients: Tempeh, soy sauce, lime juice, garlic, chili powder, shredded lettuce, diced tomatoes, and vegan cheese.
Instructions: Marinate tempeh in soy sauce, lime juice, garlic, and chili powder. Sauté until crispy. Assemble tacos with tempeh, shredded lettuce, diced tomatoes, and vegan cheese.
7. Jackfruit Tacos
Ingredients: Jackfruit, BBQ sauce, olive oil, red onion, cilantro, lime wedges, and avocado.
Instructions: Sauté jackfruit with BBQ sauce until tender. Assemble tacos with BBQ jackfruit, sliced red onion, avocado slices, cilantro, and a squeeze of lime.
8. Roasted Vegetable Tacos
Ingredients: Assorted vegetables (bell peppers, onions, carrots), olive oil, taco seasoning, guacamole, salsa, and lime wedges.
Instructions: Roast assorted vegetables with olive oil and taco seasoning until caramelized. Assemble tacos with roasted vegetables, guacamole, salsa, and lime wedges.
9. Tofu Scramble Tacos (i.e. vegan breakfast tacos)
Ingredients: Firm tofu, turmeric, nutritional yeast, olive oil, spinach, salsa, and avocado.
Instructions: Crumble tofu and sauté with turmeric and nutritional yeast until scrambled. Add spinach and cook until wilted. Assemble tacos with tofu scramble, salsa, and sliced avocado.
10. Eggplant and Hummus Tacos
Ingredients: Eggplant, hummus, cherry tomatoes, cucumber, olives, feta cheese, and tzatziki sauce.
Instructions: Roast eggplant until tender. Assemble tacos with hummus spread, roasted eggplant, cherry tomatoes, cucumber, olives, crumbled feta cheese, and a drizzle of tzatziki sauce.

2. Blueberry and Black Bean Tacos
Ingredients: Black beans, blueberries, feta cheese, mint leaves, red onion, balsamic glaze, and lime zest.
Instructions: Mash black beans with blueberries and feta cheese. Assemble tacos with the bean-blueberry mixture, mint leaves, thinly sliced red onion, a drizzle of balsamic glaze, and lime zest.

Ingredients: Zucchini, peanut butter, soy sauce, sriracha, lime juice, crushed peanuts, and cilantro.

Ingredients: Chickpeas, coconut milk, curry powder, turmeric, shredded coconut, mango salsa, and cilantro.

Ingredients: Firm tofu, mango chunks, coconut milk, curry paste, shredded coconut, fresh cilantro, and lime wedges.
Instructions: Pan-sear tofu cubes until crispy. Simmer mango chunks in coconut milk and curry paste until soft. Assemble tacos with tofu, mango coconut curry, shredded coconut, cilantro, and a squeeze of lime.
2. Strawberry Avocado Black Bean Tacos
Ingredients: Black beans, strawberries (diced), avocado slices, feta cheese, mint leaves, and balsamic reduction.
Instructions: Mash black beans and layer onto tortillas. Top with diced strawberries, avocado slices, crumbled feta, mint leaves, and a drizzle of balsamic reduction.
3. Peanut Butter Banana Tempeh Tacos
Ingredients: Tempeh strips, peanut butter, bananas (sliced), honey, crushed peanuts, and chili flakes.
Instructions: Grill tempeh strips with a peanut butter glaze. Assemble tacos with tempeh, sliced bananas, a drizzle of honey, crushed peanuts, and a sprinkle of chili flakes.
4. Caramelized Pineapple Jalapeño Tacos
Ingredients: Caramelized pineapple chunks, pickled jalapeños, cotija cheese, lime zest, and fresh cilantro.
